i made lemon bars today, but i improvised a bit because of what we had on hand. the end result was really yummy.
FOR THE CRUST:
1 cup flour
1/2 teaspoon salt
1/4 brown sugar, firmly packed
1/8 teaspoon ground ginger
1/4 pound (1 stick) unsalted butter, chilled and cut into 1/2 inch cubes
FOR THE FILLING:
3 large eggs
3/4 cup sugar
6 tablespoons lemon juice
3 tablespoons flour
1/4 teaspoon baking powder
zest from one orange
powdered sugar for dusting
preheat oven to 175 degrees celcius. grease a 8x8 inch baking pan. to make the crust, pulse together the flour, salt, sugar and ginger, then add the butter gradually until mixture resembles coarse bread crumbs. press the mixture firmly into the bottom of the greased pan and bake until golden, about 15 minutes. remove from the oven and set aside.
in the meantime, whisk together the eggs and sugar until well blended, add the lemon juice and orange zest, then flour and baking powder. pour the mixture onto the baked crust and bake for about 20 minutes until just set. do not over bake.
when cool, dust with powdered sugar and cut into squares. serve at room temperature.
Sounds delicious! I'll have to try this, Ryan loves lemon bars.
